This sounds like fun! Out of curiosity, what is the time frame for your project? Would you plant the potatoes in the fall or the spring? Potatoes are a crop that actually grow well here in central BC, but they can't be planted until May, and by the time they're ready to harvest, my grade 9 students will have moved on to a new school. I can't wait to see the final project, as it sounds like one that could be adapted for my circumstances.
I'm on the coast where it's milder, so we're going to plant them just before spring break (mid-march) in pots in the classroom, and then move them outside in early April. I usually plant some early potatoes in my home garden around this time and by the end of June we can start to harvest some baby/nugget potatoes.
